SME - The Subject Matter Expert is that individual who exhibits the highest level of expertise in performing a specialized job, task, or skill within the organization.
In short, anybody with in-depth knowledge of the subject you are attempting to document.

SME is Known as the SUBJECT MATTER EXPERT and he/she knows all the details of the domain where they have past experience.

A PROCESS EXECUTIVE having a experience of 1 year is referred as SENIOR PROCESS EXECUTIVE, then having experience in the same company for 3 years with good communication will be promoted to SME.

A SME is Subject Matter Expert is simply someone who knows something you do not know.
The Subject Matter Expert (SME) is responsible for defining the business processes, the business policies and the application requirements. He leads the business rules acquisition activities as a domain expert.
According to Six Sigma an SME "exhibits the highest level of expertise in performing a specialized job, task, or skill of broad definition."

The four critical responsibilities every SME must perform well to be effective in the desired domain;
- Manage Workflow.
- Always ask questions.
- Build relationships.
- Should always be ready to adapt changes an accept new change.

One need to talk to SMEs in the research phase of a documentation project and need to involve them in the technical validation of the drafts.

As per my understanding -

An SME is a subject matter expert. This person usually has extensive working experience in that domain and is usually consulted when coming up with requirements and solutions

A SPOC is the Single point of contact, who basically acts as a bridge between two business units or organizations. On the client's side, an SPOC would have thorough knowledge of organizational goals, business rules and stakeholders.

SME :
A subject-matter expert (SME) or domain expert is a person who is an authority in a particular area or topic. The term domain expert is frequently used in expert systems software development, and there the term always refers to the domain other than the software domain.
